Seem paal / Kadambu/ Junnu is the steamed cow’s first milk. One must be lucky to get fresh colostrum to make this in the authentic way. Lucky that we have many neighbours in our native to share this rare ingredient. If you have ever tasted the street vendor’s kadambu in T.Nagar area, remember that it is no where near the real taste of fresh kadambu. The milk is yellow in color and an authentic kadambu is mild yellow in color. Try your chance when you get one , to taste the purest of Gomatha’s love.
Ingredients:
cow’s first milk – 1/2 litre
cardamom- 4 numbers – crushed
sugar- to taste.
Procedure:
- Boil water in a pressure cooker.
- Mix sugar and cardamom with milk.
- Pour the milk in a vessel and place this in the cooker on top of a metal stand.
- Steam the milk until it is cooked and feels firm when touched.
- Scoop and serve the custard.
- Enjoy the easy to make and absolutely nutritious dish.
