Pregnancy is a beautiful experience. It is a time your hormones rule you and your cravings are either strange or stronger. I bet many get the most attention from family during pregnancy. 😉 It is often not only to keep the pregnant lady happy but also for the fact that a happy mom nurtures a happy child. Rightly said in an old tamil saying “ஊரார் பிள்ளையை ஊட்டி வளர்த்தால் தன் பிள்ளை தானே வளரும்“.
My sister-in-law loves cakes especially chocolate cake and she is pregnant. 🙂 No need to say that we all pamper her, yet a fresh gourmet cake is not an avail in our native town. I wanted to teach her how to make her own cake, so she can quench her cravings. A challenge I had was that this cake needs to be baked in a microwave oven. Whenever I baked my regular recipes in convection oven, I also tried a portion in microwave. I was in a hunt for the best microwave chocolate cake recipe.
This particular recipe was the best of all and the added advantage is that it calls for oil . Oil keeps the cake moist for longer time and as it does not need creaming of butter, there is no need for vigorous beating. A wire whisk or even a fork would be sufficient to combine the ingredients. A quick and convenient cake recipe for y’all with love from my kitchen.
INGREDIENTS
Group 1
All purpose flour/ Maida – 2 cups (1 cup= 240 ml )
Cocoa powder – 3/4 cup
Salt- 1 teaspoon
Baking soda – 2 teaspoon
Bru /Nescafe instant coffee – 1 teaspoon
Group 2
Eggs – 2 number
Sugar – 2 cup
Sunflower oil – 1/2 cup
Curd / Yogurt – 1 cup
Vanilla essence – 2 teaspoon
Group 3
Boiling water – 1 cup
Take all the ingredients in group 1 in a big bowl and mix them with a fork / whisk. The idea is to break all the lumps of the flours, if any , and distribute the baking soda well. Keep this aside.
Start whisking the eggs as much as you can, no pressure on how long and how well you need to whisk . Add the sugar now, beat until the sugar is kind of dissolved. Add the oil, yogurt and vanilla essence. Now add the dry ingredients little by little , making sure the flour mixture is well incorporated . At the end , you will have a thick cake batter , often times, finding it hard to stir. Now add the boiling water , the batter will be thin, fear not, the cake will be good.
Oil the sides and bottom of a microwaveable square pan / bowl. Pour the batter till the bowl is half full. Microwave until the surface of the cake bounces back when touched , or until a toothpick comes out clean when inserted at the middle of the bowl. The time will vary according to the size of the bowl , wattage of the oven. For a 2 cup bowl , it took 3.5 minutes on a 700 W microwave oven , this is just to give you an idea.
Enjoy your cake sliced or directly from your bowl , the choice is entirely yours. What I assure you is that the warm moist cake will translate to happiness!
